Summer Salmon Salad

Ingredients:

  • 2 small salmon fillets.
  • 1 tsp garlic powder.
  •  A finely chopped chilli.
  • ½ teaspoon smoked paprika.
  • Freshly squeezed lemon juice.
  • Spray oil.

Salad:

  • 2 small handfuls of rocket.
  • 1/2 chopped red pepper.
  • ½ chopped yellow pepper.
  • 3 chopped spring onions.

Method:

  1. Mix together the lemon juice, paprika, chilli and garlic powder and marinade the salmon in it for 1 hour in the fridge.
  2. Pop the salmon onto a pre – heated griddle pan with spray oil – cook for around 5 mins on each side until the salmon is cooked through Meanwhile chop the salad ingredients and pop on a plate.
  3. Once the salmon is cooked serve on top of the salad.

Serve with rice or baby new potatoes if desired. Salads are traditionally thought of as a fairly boring dish but they don’t have to be – try these ideas as a little change from your traditional salad.
