Walnut & Raspberry Brownies
Perfect homemade snack
Makes 12 brownies
- 1 tbsp ground flaxseed/linseed
- 250ml milk
- 70ml olive oil
- 170g melted dark chocolate
- 80g oat flour (blended oats)
- 140g plain flour
- 50g coco powder
- 100g brown sugar
- 120g fresh raspberries
- 90g dark chocolate chunks
- 75g crushed walnuts
*this needs to be room temperature, if it is too cold once it's mixed it will clump or split.
Method:
- Preheat the oven to 180c and line a regular baking tray with baking paper
- Melt the chocolate (use the bain marie method to prevent it going grainy)
- In a small bowl combine flaxseed (ground) with 2tbsps warm water and put aside (this acts as the egg in this recipe)
- In a larger bowl: combine the milk, oil and melted dark chocolate. In a different large bowl combine oat flour, plain flour, coco powder and brown sugar.
- Add the flax egg to the wet ingredients and mix before adding to the bowl of dry ingredients. Combine until mixed.
- Add ½ raspberries, ½ chocolate chunks and ½ crushed walnuts. Stir carefully through the brownie mixture and pour into the tin.
- Add the remaining raspberries, chocolate chunks and nuts on top.
- Bake for 30 minutes. Allow to cool for 15 minutes before removing from the baking tray and slicing.
