Sautéed Veggies with Cream Cheese Toast
This recipe is perfect for any time of day.
- 1 tbsp Worcestershire sauce
- 1 tsbp soy sauce
- 1 tbsp apple cider vinegar
- ½ tsp sesame oil
- 1 tsp chilli honey
- 1 garlic clove (crushed)
- ½ shallot (chopped thinly)
- Generous handful of shiitake mushrooms/ oyster mushrooms chopped up.
- 6 Plum tomatoes
- Sprinkle of sesame seeds
- Handful of spinach
- 2 Ryvitas/ protein bagel/ bread thin/ rye bread
- 2 tbsp light cream cheese or mascarpone
- Salad onion- chopped finely
- Mix together the first 5 ingredients, and add to a pan until it heats up slightly.
- Add the garlic, shallot, mushrooms, and sautee in the sauce. After the veg has started to cook down and wilt, add the tomatoes and spinach.
- Top your bread of choice with cream cheese, veggie mixture, spring onion and sesame seeds.
