Layered Protein Packed Sundae
A versatile Sundae packed with protein.
170kcals and 17g protein per person:
Ingredients:
- Jumbo oats (1tbsp)
- 1tsp honey/maple syrup
- Sprinkle of cinnamon
- 80g protein yogurt/kefir quark/ Greek yogurt (any thick yogurt will do)
- Handful of mixed frozen berries
- meringue nest (crushed into bits)
- Toppings of choice: pumpkin seeds, coconut flakes etc.
- Toast the oats in a dry frying pan for about 5 minutes (be careful not to burn them) add the cinnamon and honey/maple syrup mixing well and leave to cool down.
- In a saucepan heat the frozen berries till they resemble a jammy texture.
- In a glass of choice, start assembling the desert: spoon a layer of yogurt, toasted oats, bits of broken meringue and the stewed fruit. Repeat the layering ad then complete with a layer of yogurt and you can add a few different toppings of choice to make it look more aesthetically pleasing i.e. pumpkin seeds, coconut flakes, flaked almonds etc
