Chicken and Cheesy Sourdough
Looking for a quick lunch?
You will need:
- 50g feta or cream cheese (leave out if vegan option- or choose plant based Philadelphia)
- salt and pepper
- Pack of pre-cooked beetroot.
- lemon juice
- Garlic clove/ lazy garlic (jarred garlic)
- Lazy chilli (jarred chilli)
- Extra virgin olive oil (EVOO)
- Ryvita/ rye sourdough/ toast of choice.
- Parsley or fresh mint
- Cooked chicken (you can also cooked tofu or vegan chicken)
- Handful of seeds
Blitz the beetroot with the cheese of choice, garlic, salt, pepper & lemon juice, EVOO in a blender.
Toast the sourdough, spread the mixture on the toast and top with protein of choice and top with chilli flakes and seeds.
