Banana bread baked oats

Keep the portions small, a great one to take for breakfast !

  • 3 bananas (mash 2 and add one on top)
  • 180ml milk (or plant milk)
  • 1 egg
  • 2tbsp honey
  • ½ tbsp baking powder
  • 200g oats
  • 1tsbp cinnamon
  • 40g chopped walnuts or brazil nuts
  • Pinch of salt

 

  1. Pre heat the oven to 180 degrees, line a baking dish with baking paper.
  2. In a large bowl mash 2 of the bananas, add in the milk, egg, honey and baking powder and mix till smooth
  3. Stir in the oats, cinnamon, chopped nuts of choice and salt until well mixed.
  4. Pour into the tray and evenly spread out. Cut the 3rd banana up into slices and place on top of the mixture.
  5. Bake the mixture for about 25 mins-30 mins until light golden brown and springy to the touch. - let it cool for 10 mins before slicing and digging in! This is a great recipe for taking breakfast on the go or have it warm with high protein yogurt and berries.
