Banana bread baked oats
Keep the portions small, a great one to take for breakfast !
- 3 bananas (mash 2 and add one on top)
- 180ml milk (or plant milk)
- 1 egg
- 2tbsp honey
- ½ tbsp baking powder
- 200g oats
- 1tsbp cinnamon
- 40g chopped walnuts or brazil nuts
- Pinch of salt
- Pre heat the oven to 180 degrees, line a baking dish with baking paper.
- In a large bowl mash 2 of the bananas, add in the milk, egg, honey and baking powder and mix till smooth
- Stir in the oats, cinnamon, chopped nuts of choice and salt until well mixed.
- Pour into the tray and evenly spread out. Cut the 3rd banana up into slices and place on top of the mixture.
- Bake the mixture for about 25 mins-30 mins until light golden brown and springy to the touch. - let it cool for 10 mins before slicing and digging in! This is a great recipe for taking breakfast on the go or have it warm with high protein yogurt and berries.
