Ingredients
1 fresh salmon fillet
2 tbsp soy sauce
1 tbsp rice wine vinegar
Small piece of fresh ginger, thinly sliced
¼ fresh chilli, deseeded and thinly sliced
1 clove garlic, peeled and crushed
2 asparagus spears – remove the hard ends
1 tbsp mangetout
1 tbsp green beans
Method

- Mix together the soy sauce, vinegar, ginger, chilli and garlic.
- Marinate the salmon fillet in the fridge, in this mixture for as long as possible
- Add the salmon fillet to a hot frying pan and flash fry on each side for a few minutes, or to your liking.
- Blanch the asparagus, mangetout and green beans and serve alongside the salmon
For a summer take on this pop it on the BBQ instead of the frying pan and add a nice colourful salad instead of Veggies
