Ingredients
Mini chicken fillet
1 tablespoon Roasted pine nuts (grinded down)
Sprinkle onion powder
3 tablespoon of Panko bread crumbs
Salt and pepper to taste
Table spoon Flour
Beaten egg
Spray oil
Method
Sprinkle chicken fillets with salt, pepper and onion powder
Mix pine nuts with the panko bread crumbs
Dredge chicken in flour and coat in the beaten egg
Pat the chicken in the pine and panko mix both sides
Spray the breaded fillets with olive oil
And cook on a non-stick tray on a medium heat for approx. 20-25 till cooked through
Serve on a bed of sweet potato mash
With a side of steamed sugar snap peas
Top Tip
Add a dash of maple syrup to your sweet potato mash for an extra special twist – delish ?
