National Fish and Chip day

Serves 2


  • 1 x sweet potato
  • Spray oil
  • 1 beaten egg
  • 1 tbsp flour
  • sprinkle of chopped parsley
  • 20g bread crumbs
  • 2 x fish steak. (Cod/pollock etc)
  • salt and pepper to season to taste


  • Pre light oven to 200*c or gas mark 6

  • Cut the sweet potato into chunky chips and bring to the boil in water - simmer for 5-10 mins
    remove and add on non stick baking tray or grease proof paper to dry

  • Coat with a spritz of spray oil and add to oven for approx 30 mins until soft and crispy

  • Dip your cod/pollock into the flour, followed by the beaten egg and coat in the bread crumb and parsley mix.

  • Add to the oven with the sweet potato and cook for approx 20mins - or until the breadcrumbs are golden and the fish cooked throughout.

  • Season with salt and pepper as required

    You can add a side of lemon/lime,tartare sauce or good ole mushy peas and a dollop of Ketchup.
