Ingredients
- 1 x sweet potato
- Spray oil
- 1 beaten egg
- 1 tbsp flour
- sprinkle of chopped parsley
- 20g bread crumbs
- 2 x fish steak. (Cod/pollock etc)
- salt and pepper to season to taste
Method

Pre light oven to 200*c or gas mark 6

Cut the sweet potato into chunky chips and bring to the boil in water - simmer for 5-10 mins
remove and add on non stick baking tray or grease proof paper to dry -
Coat with a spritz of spray oil and add to oven for approx 30 mins until soft and crispy

Dip your cod/pollock into the flour, followed by the beaten egg and coat in the bread crumb and parsley mix.

Add to the oven with the sweet potato and cook for approx 20mins - or until the breadcrumbs are golden and the fish cooked throughout.

Season with salt and pepper as required
You can add a side of lemon/lime,tartare sauce or good ole mushy peas and a dollop of Ketchup.
