Ingredients
- 2 small cod fillet – no bones
- 1 tsp of ground ginger
- Juice of a lime
- 2 small sweet potatoes
- 2 small carrots
Method
- Pre – heat the oven to 200 degrees C/Gas mark 6
- Lay out 2 pieces of tin foil and place the fish on each one
- Squeeze over the lime juice and dust with the ginger
- Wrap up in the foil and place in the oven – bake for 20 – 30 mins or until fish cooked through
- Meanwhile boil the carrots and sweet potato in separate pans – mash when soft – add a little black pepper if desired
- Serve together and enjoy – remember to mash up the fish finely with the back of a fork
