Ginger and lime Cod

Serves: 2

Ingredients

  • 2 small cod fillet – no bones
  • 1 tsp of ground ginger
  • Juice of a lime
  • 2 small sweet potatoes
  • 2 small carrots

Method 

  1. Pre – heat the oven to 200 degrees C/Gas mark 6
  2. Lay out 2 pieces of tin foil and place the fish on each one
  3. Squeeze over the lime juice and dust with the ginger
  4. Wrap up in the foil and place in the oven – bake for 20 – 30 mins or until fish cooked through
  5. Meanwhile boil the carrots and sweet potato in separate pans – mash when soft – add a little black pepper if desired
  6. Serve together and enjoy – remember to mash up the fish finely with the back of a fork
