Try these recipes to get you started:
Spicy Chicken
Mix together 1 tsp of chilli sauce, olive oil, Worcester sauce, crushed garlic and mustard Pour over chicken breast and marinade for 1 hour
Veggie Kebabs
Thread skewers with onion wedges, mushrooms, pepper chunks and courgettes. Brush with low fat vinaigrette and BBQ.
BBQ Salmon with Exotic Salad
Season salmon fillets and BBQ. Drizzle with a little soy sauce. Mix Chinese cabbage, grated carrots, mange tout, spring onions and asparagus tips. Add a tbsp. of sesame seeds
For a salad dressing try: -
½ tsp. fish sauce
3 tbsp. sunflower oil
1 tbsp. sweet chilli sauce
2 tbsp. chopped mint
Finely chopped ginger root
Juice and zest of 1 lime
For the marinade: -
1 tsp. paprika
1 tsp. crushed cumin seeds
1 tbsp. crushed fennel seeds
3 cloves crushed garlic
2 tbsp. chopped parsley
2 tbsp. olive oil
Juice of 1 lemon
Serve with a little humus or low fat yoghurt
